FDA has approved Butterfly Pea Flower, a plant native to Southeast Asia, as a color additive exempt from certification. It is particularly known for its ability to change colors depending on the pH. In its water infusion the blue color changes to purple as the pH in the presence of a little acid, becoming hot pink as the acidity increases.
As the scientists said, this action of the FDA will attract more beverages and food companies to use Butterfly Pea Flower, such as in alcoholic drinks, sports drinks, carbonated soft drinks, fruit drinks, coffee creamers, ice cream and frozen dairy desserts, fruit preparations in yogurt, chewing gum, coated nuts, and candy.
