FDA has approved Butterfly Pea Flower, a plant native to Southeast Asia, as a color additive exempt from certification. It is particularly known for its ability to change colors depending on the pH. In its water infusion the blue color changes to purple as the pH in the presence of a little acid, becoming hot pink as the acidity increases.
